Use It Up
“Use It Up,” a game I first
heard of on Martha Stewart radio, has been a theme in my house this last
week. For those harvesting the bounty of
their own gardens, perhaps this has been a trend for several weeks now. Finding ways to hide swiss chard in meals so
that the family won’t complain, “More swiss chard?” or using up the canned
goods from last year to make room for this year can inspire some creative
thinking in the kitchen.
For me, this week, has been
about using up the box of yellow zucchini squash my husband brought home and
the elk meat from last year. Where I
used to search Google for recipe ideas, I now explore Pinterest.com for
suggestions. A Google search will
result in big name domains; Pinterest leads me to cooking blogs. The blogasphere is a wild and crazy
place…there are so many. But the cooking
blogs give me something I don’t see at Martha Stewart or Epicurious—a story
coupled with unique photography. I just
recently came across Pioneer Woman, and from a professional viewpoint, I ponder
her rise in success as she has grown from blogger to having her own show on the
Food Network. Please feel free to post

I didn’t want to just sauté
the squash with onions. From Pinterest
inspiration, I tried fritters. Grated
the squash then mixed with onions, flour, eggs and spices then fried. They sort of resembled small potato
pancakes—not bad but I look forward to playing with this recipe more,
fine-tuning it. I served the fritters
with Polish sausage. Tuesday night, I
tried squash boats—a variation on stuffed squash, cutting the squash in half
lengthwise then topping with tomato sauce, spices, and Hot Italian sausage cut
the same as the squash.
Mom gave broccoli from her
garden. Wednesday, I took a package of
elk steaks out of the freezer and then looked on Pinterest for Mongolian beef
and broccoli recipes. Drawing from 2
different recipes, one written for slow cooker, I pulled out the Crock Pot in
the afternoon and was able to have my first try at Mongolian Elk and broccoli
ready in time for dinner. Thursday
night, I cut the sausage and squash boats in bite size pieces and tossed that
with cooked pasta.
I am proud of those culinary
accomplishments; I love “Use it Up”—it’s a game everyone wins (like a wine
tasting) and it can save from wasting food.

Tom Agnetti will be teaching
Art Class for Kids at the River’s Edge Gallery Wednesdays this fall; after
school until 5:30 pm. This is an awesome
opportunity for our children. Class
costs $5 each or a month’s worth lessons for $16!
The GRVCCA Annual Ag Banquet,
honoring our agriculture community and heritage, is Sat. Oct 27 at the Twin Bridges
